Another successful meal, remember in my house a successful meal is measured by whether or not Little Man has seconds.  This meal was made for him though, it has all his favorite ingredients; pasta is number one on his list especially when that pasta comes in the form of “Doot Doot noodles.” I cant remember when he started calling them that but a “Doot Doot noodle” is normally a Rigatoni or Penne or anything that maybe resembles a horn?  Kielbasa is another favorite of his as well as cheese and apples. This was a great combination.  I found this recipe in my Publix Family Style magazine and modified it a little.  I will definitely make it again.
Pasta Bake with Kielbasa and Apples
Ingredients:
One box of “Doot Doot” Noodles
2 cups of milk
2 Tbsp all purpose flour
1 1/2 shredded cheddar cheese
1/2 tsp salt
1/2 tsp hot pepper sauce (I left this out when making for the kids but added some after to my portion)
2-3 apples cored and cut into 1/2 inch cubes (Fuji or Braeburns are good choices,)  enough to measure about 2 cups
8 ounces of Kielbasa, halved and sliced 1/4 inch thick
1 green onion, sliced
Preheat oven to 350 degrees. Coat a 3 quart baking dish with nonstick cooking spray.
Cook pasta according to directions, drain and return to pot.
Meanwhile in a medium saucepan  over medium heat, whisk together the milk and flour until thickened and bubbly. Remove from heat and add half the cheese, salt and pepper and mix until smooth.
Add the sauce to the pasta along with the Kielbasa and the apples and combine. Transfer to baking dish; cover with foil.
Bake in oven for 20 minutes. Remove foil and top with remainig cheese and green onions. Bake10 minutes more, until cheese is melted and sauce is bubbly.  Let stand for 10 minutes before serving.  Enjoy!
